I’ve had a breakthrough. Though I love Chile and its gastronomy, I’ve realized this country does NOT know Cake, or queque (pronounced K-K) as they call it. I’ve deduced it’s because they lack the brillance of adding butter to everything. The cake here, no matter how delicious the filling, is almost ALWAYS super dry. My mother has always taught me to appreciate the cake as just as important as the filling and the frosting. The cake is the main bit! No amount of manjar, chantilly, or marmalade will make me eat a dry, crusty, piece of cake (I’ll just eat the filling part :)
Geez, get it together Chile. It’s called instant pudding mix in the batter, buttermilk, applesauce, well anything except overcooked cake really. I’ll forgive you this time because your empanadas are delicious, but next time I’m calling in Dorothy.
